This web site has been rather hurriedly put together, so not everything is quite the way we want it, yet. So, there are descriptions of our breads here, but not many (if any) pictures yet. We'll add pictures real soon now. For now, for those of you who have asked about our breads, here's a fairly complete list.

American Harvest Bread Light, lively, filled with grains and craisins, a great breakfast bread - break out of the raisin rut! This bread was developed by the Bread Bakers Guild of America to help win the Coupe du Monde de la Boulangerie, the "Grand Prix of baking." One taste and you'll see know this is a special bread indeed. Baked Potato Bread Whether you think it's potato or potatoe, you'll love our rich baked potato bread. A lovely all-around bread that help make any meal better. We think that baking the potatoes helps the potato taste come forward much farther, making this a richer bread than our mashed potato bread. Which is the better bread? We like both and we're happy with whichever one is on our dinner table! Try 'em both and let us know what you think. Baurenbrot or German Farmers Bread Another classic German recipe we are working on. It's a bit too early to talk about it, but it's coming and it's great.

Big Foot Ciabatta Big foot ciabatta - click on it for a larger view A nice rustic Italian inspired loaf. "Ciabatta" is Italian for "slipper". We think they're a bit large, but our baker, Bigfoot, says they're just right. Anyway, invite over some friends, put out a bowl of olive oil, rip off pieces of the bread, dip 'em in the oil, have some wine. What could be finer? A nice light loaf with a firm crust. A rich wheaty taste. Perfect for dipping. Only available in it's rustic "slipper" shape. Flour, water, sourdough starter, milk, extra virgin olive oil, and salt.
Big Oat Loaf Bursting with flavor, bursting with oats, sweet enough for breakfast, but good anytime, our big oat loaf brings you all sorts of oaty goodness. This is a slightly sweet loaf, made with toasted oats, cooked oatmeal, and more oats on top. The bread has a slightly open crumb. The bread has a delightful taste that plays the wheat and oat contents against one another. The name is somewhat of a joke in that the bread is made with an Italian style yeast starter called a "biga," a starter that lends a slightly nutty taste to the breads that use this technique. Black Canyon Sourdough Bread A taste reminiscent of yesteryear. Rich, tangy, bold. One of our few plain white breads, this sourdough bread is styled after a San Francisco Style Sourdough. Of course, we're not in San Francisco, so we can't call it by that name. It has a nice wheaty taste with a hint of sour that grows stronger over a period of several days. Several people from the city by the bay tell us this bread makes them feel like they are back home. Bohemian Rye Sometimes called "deli rye," this is an assertive rye with a hearty kiss of caraway. This medium rye bread has a nice sour taste that lingers on the palate. It's a great sandwich bread, and great by itself. Beth, Mike's wife, says its her favorite bread of all the breads Mike makes. Bran Bread Many people want additional bran in their diets. Many people think that bran tastes, and looks, a lot like sawdust. We think both groups will be delighted and surprised by this wheaty bran bread. Bran, whether from oats or wheat, is said to lower cholesterol. We take care to not introduce cholesterol into this bread, and more care to insure it is delicious. Heath and taste in one bread - a concept as old as the pyramids brought to life again here and now. Organic whole wheat flour, Organic Bread Flour, wheat bran, honey, olive oil, salt and yeast.
Bread Pudding We make a variety of sweet and savory bread puddings. What they have in common is they are all delicious! Our savory bread puddings can be eaten like macaroni and cheese or yorkshire pudding as a side dish. Our sweet bread puddings are a great dessert or a great treat any time. Just ask at the Mike's Bread booth what bread puddings we're featuring this week! A hint - to enhance your enjoyment of our chocolate bread puddings, you can easily make your own delicious rum or bourbon sauce with this simple recipe. You'll need 1 TBSP butter, 1 cup confectioners sugar, 1 TBSP of rum or bourbon, and the juice and zest of ¼ orange.

Melt 1 TBSP butter in a saucepan. Add the orange juice, and then stir in confectioners sugar, whisking until smooth. Remove from heat and add the rum or bourbon and orange zest. Return to heat, stir and cook for 2 minutes, until the sauce is slightly thickened.

Serve warm over warm bread pudding. Of course, you could use this sauce AND ice cream and whipped cream!

The ingredients vary, depending on the kind of bread pudding we are making. We usually use at least three of our breads, half and half, and eggs. Beyond that, they sky is the limit!
Breakfast Loaf With Sesame Seeds and Raisins A nicely decadent bread offering the richness of roasted sesame seeds and the sweetness of raisins. What a great way to start a morning - whether toasted or plain, we this one really hits the spot! Depth of flavor is something we talk about a lot. If you try this bread, you'll have a great example of what we mean. Water, whole grain flours (Organic whole wheat flour, stone ground graham flour), raisins, unbleached unbromated bread flour, organic wheat gluten, sesame seeds, salt, and yeast.
Bulgur Bread If you like crunchy breads like our Flax Seed and Grains Galore breads, we think you'll like our bulgur bread. It adds bulgur (a processed wheat product, used much like rice or orzo, and very tasty) to a white and whole wheat mixed flour bread. Bursting with flavor, bursting with crunch, this bread really satisfies! Crunch and fiber are your friends.... get lots of both with Bulgur Bread! Cardamom Raisin If this bread seems a little better, a little fresher, if it seems to just explode with taste in your mouth, we think it is because it is made with fresh spices and herbs. We zested the orange ourselves, we ground the nutmeg ourselves, and we prepared the Cardamom ourselves. It's a lot of work for this whole grain bread, but we think its worth it. We hope you agree. Spices and raisins just go together so nicely, and we wanted to try a spice other than the ubiquitous cinnamon. Cardamom is a spice that is at once strong, intense and indescribable. Paired with fresh orange zest, ginger, and nutmeg the result is a taste that works very well with the 100% whole wheat flour - this is a bread that will surprise and delight you. Caramelized Onion Bread Rich and hearty are words that will come to mind when you taste this bread. While this bread has delicate onion notes, it is hearty enough to be served with any meal. This new bread is quickly becoming a favorite at the Bread Guy's house! Many people don't know how much a carmelized onion can add to the flavor of almost any food. Celtic Harvest Bread (formerly Struan) A wonderful harvest bread, covered with poppy seeds and bursting with flavor. People who try it love it! However, it's old name made it too hard a sell, so we changed the name. This harvest bread leaves us wondering how authentic it is. Did the Celts have corn or brown rice? Authenticity questions aside, its a delicous bread. It sells out early at the farmers market, so get there early if you want some! Challah The classic Jewish Sabbath bread. Ours isn't Kosher, but it is as authentic as a bunch of goyim can make it. The distinctive double stranded bread is called a "top Challah". If you have left-overs, think French toast. Yum! Rich. Eggy. Delightful whether topped with sesame or poppy seeds, this isn't a celebration bread, its a bread that makes any meal a celebration. Chocolate Craisin Bread Rich cocoa balanced with craisins, plumped in French Brandy, make this an excellent bread for desserts, or just for fun. Tart and sweet and chocolate. A nice blend of tastes! Organic Bread Flour, water, craisins, sourdough starter, cocoa, brandy, salt, black pepper.
Cinnamon Raisin Bread We start with our rich Challah, and add butter, sugar, brown sugar, cinnamon, and raisins. Toasted, plain, or as an incredibly rich French toast, it'll knock your socks off! Rich, eggy, cinnamony, this a fine breakfast bread! Organic Bread Flour, water, sourdough culture, filling (butter, sugar, brown sugar, raisins, cinnamon), eggs, egg yolks, sugar, olive oil, salt.
Classic French Bread This is a classic French Levain bread made with a three day process. It's not as sour as an American Sourdough, but its fans say its taste is much more complex and tantalizing. While milder than our Black Canyon Sourdough, this bread is has more wheat taste. Good for over a week, many Frenchmen argue about how many days after baking this style of bread is at its best - the flavor changes. When you say "French Bread" to many people, they think "baguette", however, there are many different French breads in many different shapes. We usually make this as a boule (which some people call a "roundy") or batard (which some people call a "torpedo"). Organic Bread Flour, whole wheat flour, water, salt, sourdough culture.
Country Millet Rye Bread This country style loaf is bursting with flavors that are new to many people, but that have been enjoyed for centuries. Millet and rye combined with slow rises give this bread a deep taste with a hint of sweetness from the rye flour. It's enough to make you say, "Let's all move to the country!" Millet and rye combine synergystically to produce a bread that is greater than the sum of its parts. Organic Bread Flour, rye flour, toasted millet seeds, water, salt, yeast.
Cracked Wheat Bread The flagship of our new yeast bread line, this bread is fresh, light, crisp and OH! So VERY wheaty. It's so popular here we have trouble saving it long enough to get it to the store! Crisp, clean, wheaty, with just a hint of crunch from the cracked wheat. An excellent sandwich bread, an excellent bread with cheese, and excellent bread just by itself! Organic Bread Flour, water, cracked wheat, sugar, salt, yeast.
Deli Rye A nice light rye with a hearty kiss of caraway that somehow leaves you wanting just another slice. Unlike most of our rye breads, this one is raised with yeast, giving it a lighter taste than many of our sourdough ryes. This is great for people who prefer milder tastes, or foods that don't pair well with our more assertive rye breads. Organic Bread Flour, medium rye flour, water, salt, butter, caraway seeds, yeast.
Dilly Onion Some tastes just go together so well we talk about flavors marrying. Dill, onion and rye are just such a pairing. This bread makes great sandwiches, and is an awesome all around bread.

Loaded with flax seed meal, sunflower seeds, poppy seeds, and flax seeds, this bread is a GREAT breakfast bread, and wholesome too! This is one of our lighter "crunchy" breads. The flax meal, flax seeds, poppy seeds, sunflower seeds and honey combine to give this bread a very memorable taste and a delightful crunch. I think everyone should have some crunch in their diet! This bread is available as boule (or "roundy") and batard (or "long") loaves. Flax Seed Rye Bread A subtle change... no sweeters have been added t this bread, just the natural sweetness of rye. A very nice flax seed bread, though completely different from our other flac seed bread. More bread poetry as we finalize the formula and are inspired by this lovely bread. Once the formula is finalized, we'll post the ingredients. Check back soon now, y'hear?
Garden Herb Bread An amazing mixture of vegetables and herbs, this unusual bread will delight you with it's all natural colors and tastes. This is a braided bread, and each strand is made with a different combination of vegetables and herbs. Beets with oregano and thyme, spinach with garlic, and tomato puree with rosemary make each bite of this bread different and memorable. Each strand has a different color, and all the colors are natural! NO FOOD COLORING! Despite the presence of what they call "icky vegetables", we are amazed at how many children really like this bread. It's sure to garner you compliments if you serve it as part of a festive meal. Garlic Head Made for the true garlic lovers among us, this bread has over a head of garlic in each loaf. Not little chunks - whole roasted mellow cloves! To liven things up more, the bread is also stuffed with chunks of rich sharp cheddar! A taste that will linger for hours! This is a bread people either love or hate. Since we're using natural garlic, sometimes the garlic taste is stronger than other times, and some people really don't like whole cloves of garlic. But, for those of us who like it, it's just amazing! Real garlic, and enough of it! No need to worry about vampires for days after you eat this! Grains Galore Filled with grain and crunch, this delicious bread is a great way to get some additional fiber in your diet. This is another of our "crunchy" breads, but it is so full of seeds it won't rise like a lighter bread. We've tried cutting back on the amount of seed in the bread to get it to rise better, but then the bread just isn't the same. Some breads just weren't meant to be light and fluffy! The way this bread is made, each bite explodes with taste. I especially love this bread toasted and smeared with cream cheese. Green Olive Over A fresh new olive bread from our ovens – using green olives enhanced by oregano and rich olive oil for a taste of Italy! After having our black olive breads, a customer asked why we didn't make a green olive bread. So, we did some research, tried a few recipes, and then came up with this. We were really surprised at how much we like this bread! Organic Bread Flour, water, green olives, olive oil, salt, red pepper flakes, cracked black pepper, oregano, and yeast.
Green Chile Bread Inspired by delicous green chile breads we enjoyed in New Mexico, this bread is rich and warming. Enjoy it with chili, enjoy it as a grilled cheese sandwich, enjoy it by itself, or best of all enjoy it with friends! Inspired by breads from Albuquerque, this bread mixes French techniques and new world green chile peppers, tomatoes, and spices to create a very memorable bread. Inspired by a great bread from France, long yeasted rises bring out the big taste of wheat. Deeply satisfying with any meal, or by itself. A few of our customers say this is the best bread they have ever had. This is one of our "plain white breads", though the simplicity of its ingredients doesn't mean the bread is at all plain. This bread was based on the book, "Bread of Three Rivers: The Story of a French Loaf" by Sara Mansfield Taber. Ms. Taber made a passionate pilgrimage to find the best bread in France. Once she found the Bread Of Three Rivers, she follows her favorite French bread's ingredients to their source. We couldn't duplicate it, of course, but we did read very carefully between the lines of the book to determine the recipe. And then we made an American version of the bread. This bread has had several incarnations over the years. Now it is a crusty loaf with large irregular holes in the crumb. It toasts and grills beautifully, it makes wonderful sandwiches, and it is delightful just by itself or with a nice cheese. Available in boule ("roundy") or batard ("long") loaves. Homestyle Honey White Bread If you were lucky enough to have a mother or grandmother who baked bread when you were growing up, chances are the bread they baked was a lot like this one - slightly sweet, filled with the taste of wheat, milk and honey, a bread that makes wonderful toast. Umm... slightly sweet, filled with the tastes of wheat, milk and honey, a bread that makes a wonderful toast? Organic Bread Flour, water, instant milk powder, honey, butter, salt, yeast.
Honey Wheat Bread Fresh wheat and honey tastes lift this bread to another level, delighting us, and, we hope, you as well. While many people like our Sourdough Wheat, many find that bread to be too assertive. So, we changed the recipe to use yeast instead of sourdough and a whole new bread emerged. The taste of the whole wheat and honey come forward, and the result is fresh and delightful. Available in boule ("roundy"), or batard ("long") loaves. Honey Wheat With Lemon and Poppy Adding lemon and poppy seeds to honey and wheat takes things to a whole new level. This bread has become quite popular at both farmers markets, and our health food store outlets! Fresh wheat and honey SHOULD be enough for anyone, but not us! We add lemon peel, lemon extract and lots and lots of poppy seeds for a crisp fresh taste that is sure to delight you! Water, organic whole wheat flour, organic bread flour, poppy seeds, honey, lemon extract, lemon peel, salt, and yeast.
Landbrot, or "Country Bread" This is a classic German country bread. Wheat, rye, and hearty. It's still to early to put much here, so just check back later. The formula is being finalized, so we can't really talk about ingredients yet.
Mashed Potato Bread Maybe some would call it potatoe bread, but whatever you call it, it's a nice light bread with the clean taste of potatoes lightening the bread. Something almost magical happens when you put potatoes into bread... the bread is moister, lighter, and more flavorful. A wonderful sandwich bread. Mexicali Heat Chock full of smoky chipotle peppers, this bread is for people who like heat in their food. It makes an awesome grilled cheese sandwich - especially with a good pepper-jack cheese. Some people say this is like eating a bowl of black bean soup. Only different. We like to make grilled cheese sandwiches out of it, especially with a pepper-jack cheese. This was the first bread, and the first wheat bread, Mike baked. Friends seemed to wind up at his house shortly after it came out of the oven! It's still a favorite because it has a great complex wheat taste without being too heavy. And it's a great sandwich bread! This started as a recipe from "The Joy Of Cooking" - "Whole Grain Plus". I've changed it since, reducing the amount of yeast so it can have a longer rise and a richer taste. It's still a favorite - wheaty, but not too wheaty. Norwegian Coarse Grain Bread A fairly dense bread that is filled with cracked wheat and chopped rye. Nice, coarse grains. A good anytime bread! Based on a friend's recollections of a trip to Norway, we developed this recipe which has just enough bread flour to support the coarse grains and whole wheat flour in it. A rich hearty taste and a lot of crunch let you know this bread is good and good for you. Organic bread flour, organic whole wheat flour, water, organic cracked wheat, cracked rye, salt and yeast.

Oaty Wheat Bread Sometimes called, "Eau de wheat." this bread reminds us how much oats add to a bread. Rich, flavorful, moist and good anytime. It's not just good for you, it's just good! In earlier days, some bakeries called breads like this whole wheat breads. However, since we are using some white flour to help the bread rise nicely with the oats in it, we can't in all honesty call it whole wheat. It is wheaty, it is oaty, it is delightful, but it isn't whole wheat. Wheaty enough to be good for you, with enough bread flour to rise well! Olive My Dreams Brimming with rich olives and rosemary, this bread will take your breath away!! Our first olive bread, this one remains our favorite - this complex olive bread changes its taste from bite to bite and from day to day. Two kinds of olives, rosemary and chilli flakes combine wonderfully to demonstrate synergy, reminding us that the whole can be greater than the sum of its parts! Olive Time Bread Olive Time group shot - clicke here for larger view With Thyme embracing the taste of ripe California olives, you'll quickly know why we say it's "Olive Time". A number of our customers wanted an olive bread that wasn't as over the top as Olive My Dreams. They wanted a rich bread, but not one so overwhelming. So, after a bit of work, Olive Time was born. Still delightful, still rich, still lovely, just not as spicy and overwhelming. Panama Bread This is a white bread, made with milk. It is bursting with flavor and has an absolutely intoxicating aroma - what else would you expect with this name? Panama Bread started out as a joke... it was 2 or 3 in the morning and I was up to my elbows in breads baking for the next bread day. I heard a well known song on the radio and started singing "Panama Bread." That led to wondering what sort of bread people eat in Panama. A search on Google turned up a promising recipe called "Micha bread." My name in German is Micha, so I felt like I was meant to make this bread. And.... it was better than I would have dreamed. "Ol' judge don't know when Panama bread is back in town!" If you like white bread, we think you'll enjoy this bread! Organic bread flour, milk, water, salt, yeast.

A lovely Sicilian style bread made with semolina flour and a generous dusting of sesame seeds for a rich earthy taste. The distintive "S" shape of this bread makes it a lovely centerpiece. It can be sliced or just pulled apart - either way, it's delicious! With scads of jalapeno peppers and heaps of tangy sharp cheddar, this bread is the second in our series of "Strong Breads with Strong Flavors for Strong People." We hope you'll like it as much as we do. After the success of "Garlic Head". we realized that there were people who wanted breads that took their tastes to places they'd never been before. People other than just us. A box of Jalapeno's gave us our inspiration. We roast the peppers to deepen their taste, and the cheddar cheese provides a wonderful balance. Since bellies are more likely to be round than long, we only make this bread in boule, or round, loaves. Prussian Rye An assertive rye bread inspired by the old German empire. This bread offers a clean rye taste, especially delightful for those who love rye bread, but not the seeds that are often added to it. A very straight rye.... a very nice rye, though a bit assertive for some. Water, rye flour, high gluten bread flour, sourdough starter, salt.

Pumpkins are such a part of the fall harvest! We love them at Halloween and at Thanksgiving. Now, you can enjoy them in a bread. Packed with pumpkin, and filled with roasted pumpkin seeds, this bread would be good all year round. We usually only make it in the fall, so enjoy it while you can! Pumpkin, pumpkin seeds, and pumpkin pie spice bring a symphony of tastes in this slightly sweet bread. Since pumpkins are round, we're only making this seasonal bread in boule, or round, loaves. Pumpkin Seed Bread This very German style bread is bursting with roasted pumpkin and sesame seeds, and is a very rich rye bread. It is at once healthy and delicious! Rocky Mountain Rye (Rye Colorado!) This whimiscally named German style rye bread is made with 70% medium rye flour and 30% wheat flour. Unlike many German rye breads, it has no seeds to get in the way of its pure rye taste. Its sure to please people who love rye! If you love rye, you'll almost certainly love this bread. San Francisco Style Sourdough Bread After much searching, we found an authentic recipe for San Francisco Sourdough Bread. Even though it isn't made in the city by the bay, it is a very, very nice bread with a good crisp crust and a dense crumb. It has a lovely sour flavor that somehow still doesn't get in the way of the wheat taste of the flour. We like it, and we think you will too! If we were in San Francisco, we'd call it San Francisco Sourdough Bread, but we aren't, so we won't. Still, it is based on an authentic recipe from Dr. Frank Sugihara, the man who discovered what makes San Francisco Sourdough special. It takes over 16 hours to make this bread, but we think you'll agree the taste is worth it! Patent flour, Organic Bread Flour, our sourdough culture, water, and salt. And that's all!
Sherill's Rye A nice rye bread built on a flavor base of whole wheat flour - especially nice for people who like a rich rye rye but don't like caraway. Sourdough Whole Wheat Bread An all whole wheat bread, kissed with honey. What a way to start a day! This is one of our favorite all-around breads, and we hope you'll love it as much as we do. We REALLY need to re-write the wrapper text. This is our most assertive sourdough bread. The sourdough really works aggressively with the whole wheat flour, and the result is a symphony of sour. We really can't taste the honey and are debating removing it. If you want a sourdough bread that gets up and screams in your face, this is it. Two parts of the wrapper text are correct, it IS one of our favorite all around breads, and we do love it. Sunburst Rye One of our new rye breads, this bread is stuffed and topped with toasted sunflower seeds, and packed with chopped rye kernels, this bread is bursting with flavor and goodness! Does it look like the sun, or just a sunflower? It depends on how whimislcal you are feeling. But, there is no doubt about the taste of this bread. A light rye with lots and lots of sunflowers. It's a delight with any meal! Amazing complex, yet amazingly delicous and satisfying, our Raisin Walnut Rye Bread is a great bread for breakfast, or with nice cheeses. As much as we like our other raisin breads, we wanted one that wasn't quite so rich, but was still very satisfying. This bread has a lovely balance of flavors. At this time, this loaf is only available as a boule, or "roundy", loaf. Organic Bread Flour, water, medium rye flour, raisins, walnuts, sourdough starter, salt.
Wheaty Wheaty Bread We really like our cracked wheat bread, but we wanted it wheatier, so we've replaced a lot of the white flour with Organic whole wheat flour flour. The result is a rich taste with cracked wheat crunch. If you're a crunch fan, we think you'll be a wheaty wheaty fan too! Half the flour in this bread is whole wheat flour, the rest unbleached bread flour. We want the benefits of whole grain flour, but we also wanted a good rise in the bread, especially with the load the cracked wheat put in this bread.
